It has been two weeks since I got serious about trying to get my weight back up with Operation Bradley Cooper and a little over a month since I cratered out at 151. What has happened in the this last month? I’ve managed to gain 5.8 lbs is what happened! I’m now at 156.8, the most I’ve weighed since February when my weight started declining again. It really seems that something in my system shifted in the last few weeks since I’m finally able to gain weight and keep a steady gain. Granted, I’m eating a lot more calories than I’m burning so maybe still not absorbing perfectly but at least I know that if I eat enough food that I can indeed keep the weight trending in the right direction.
I have definitely increased my carb load during this time eating a lot more fruit and having at least fairly starchy side with dinner each day. Right now I’m rotating sweet potato or yam, regular potato and white jasmine rice as this starch. I bought some brown jasmine rice and am going to try it out just to see what happens, the whole idea of white rice still turns me off completely but it seems to be doing its job. I know rice isn’t really Paleo and for that matter potatoes aren’t either but at this point I sort of need them so I’m going with it. I also am eating a lot of coconut flour muffins and cookies plus one piece of dark chocolate every day and often a scoop of homemade coconut milk ice cream at the end of the day.
At this rate I should be above 160 next week which has been my intermediate goal since sometime last summer. I really am aiming for 165 which was my weight when I was working out a lot and able to run anything from a half marathon to a 50k pretty much every weekend. Once I get to 160 I’ll back off the excess calories a bit to make sure I don’t overdo it and I’ll keep up with some running and weights to make sure all this doesn’t end up on my belly.
